Mix the ingredients for the chia pudding together and leave the mixture to infuse in the fridge for at least 2 hours or overnight. Blend the berries, agave syrup & optionally a little water for the berry topping in a blender to a fruit puree, then layer the chia pudding with a little more yoghurt, the berry topping and more fruit.
Blueberry Matcha Chia Pudding
- 2-3 tbsp chia seeds
- 2 tbsp soy yoghurt
- 1-3 tsp agave or maple syrup (to taste)
- Vanilla (optional)
- Half a glass of matcha latte or:
- 0.5 tsp Health Bar Matcha + half a glass of oat milk
Berry topping:
- Frozen blueberries
- Some agave syrup
- Some water for blending (optional)
- Soy yoghurt & fruit for decoration (kiwi)
